Wild Game Meats - How Do They Taste?

Specialty wild game meats like buffalo meat, ostrich meat, alligator meat, and others are becoming increasingly popular with consumers and restaurant diners. Previously largely unavailable to the average consumer, these wild game meats are enjoying a renaissance. Not only are wild game meats low in fat and cholesterol, they are easy to prepare. But how do they taste?

Wild game meats, when prepared properly like any other meat, have a lean savory taste, in general. Over the past year, we've tasted dozens of wild game meat recipes as research for our wild game meats resource website. Here's a virtual sample of six popular varieties of wild game meats, all of which are available to consumers as burgers, steaks, and roasts.

First, buffalo (bison) meat. Bison is, of course, very similar to beef but without all the fat and calories. Buffalo meat is somewhat dense and benefits from slow, lower heat cooking. Buffalo steaks and buffalo burgers taste just like regular beef, but slightly sweeter. You'll definitely notice the leanness too.

Alligator meat has been a staple of Florida menus for years, with good reason. Alligator meat tastes great! It's usually served as tenders or nuggets, but is also available to consumers as steaks. With a taste similar to veal, alligator meat is a white meat with roughly the same consistency as chicken breast but denser in flavor and somewhat more chewy, but not tough.

Elk: Elk meat is available as burgers, steaks, and roasts, with burgers and roasts are most common. As elk is part of the deer family, think venison in terms of taste. If you've never tried venison, it's fair to say elk meat is pleasant and somewhat sweet tasting. Elk meat is dark meat and extremely low in fat. As such, it benefits from slow, low heat cooking, and not overcooked.

Pheasant has always been a popular choice for gourmet diners. Now, pheasant has become more of a mainstream choice due to its pleasant, mild flavor. Pheasant meat is pinkish white, very low in fat, and easy to prepare. We found pheasant to taste much like cornish hen.

Ostrich: Ostrich meat is also very lean, much leaner than beef or even buffalo. Ostrich is usually available as burgers, which tasted to us like a ground sirloin burger. Since ostrich is low fat, it benefits from low heat cooking, typically to medium rare. Other cuts of ostrich meat are starting to become available as well, including roasts.

Rattlesnake: If you've ever spent time in the southwestern U.S., you've likely seen rattlesnake on the menu, usually as rattlesnake chili. Rattlesnake meat is quite popular in states like Arizona and Texas, and can be prepared several ways, including nuggets or marinated as part of an appetizer or salad. Rattlesnake meat has a slightly chewy texture and is a white meat, similar to chicken breast although interestingly, lower in fat than chicken breast.

We had quite a bit of fun tasting and experimenting with these wild game meats. These meats are now available and have been raised under state regulated conditions, intended for the end consumer. The health benefits of wild game meats are notable in comparison to traditional meats, and their versatility in recipes is a plus. We found all of these meats very enjoyable, and enjoyed their interesting and pleasing, savory taste.
